3 Mutton Biryani

 This is a very easy recipe for making mutton biryani in a pressure cooker. The mutton is cooked first and then added to the rice and aromatics along with the liquid used for cooking mutton. Here is how to do mutton biryani in the pressure cooker.

Gently wash the basmati rice in running water and let the rice soak in the water. Soaking the rice in water is one of the key steps in making biryani in pressure cooker. It helps in keeping the rice intact while cooking without becoming mushy. Soak the rice in water before starting to cook. Set aside.

Take a pressure cooker and add in the mutton pieces, salt, turmeric powder, coriander powder and red chilli powder.

Add 1.5 cups of water.

Cover and cook for 20 minutes on medium flame.

Expect 15-18 whistles. Remove from heat and set aside.

Let the pressure release on its own.

Remove the pieces and keep it separately and save the liquid.

The liquid has got a lot of flavour. We will use it later.

Make a paste of ginger and garlic in a blender.

Add up to 1/4 cup of water and grind it into a very smooth paste.

Set aside.

Heat Oil in a pressure pan and add in the spices. Cinnamon, Cloves and Cardamom. Add in the onions and sauté until the onions are soft. Once the

onions are soft, add in the tomatoes and the ginger garlic paste, yogurt and green chillies. Sauté the mixture until streaks of oil appears on the top.

Drain the rice and add it to the pan. Add in the mutton pieces. Add in the coriander leaves, mint leaves and juice of a lemon. I have used 1 cup of rice today (250 ml). We use 1.5 cups of liquid for each cup of rice. The mutton liquid I had was about half a cup. So, I added a cup of water and the mutton liquid.

 Close the pan and cook on medium flame for first whistle and on low flame for the next whistle (about 3-4 minutes). After the two whistles, switch off the flame and wait for pressure in the cooker to release naturally. Open the pan and fluff up the rice gently. Serve Pressure Cooker Mutton Biryani hot.

  1. Goat Stew

This goat stew is based on a Filipino dish called calderite. It is usually served with rice. The serving size for this recipe is 2 to 4, depending on how much bone the meat has. Serve over rice. Masara!

  • 1 teaspoon grated nutmeg
  • 2 tablespoon beans
  • 1/2 teaspoon red chilli powder

Step 1 Finely chop the veggies.

To prepare this delicious stew recipe, take a chopping board and finely chop onions, carrots, potatoes and beans. Heat butter in a deep pan over medium flame and add onions to it.

Step 2 Fry the onions & mutton, then add flour.

Fry the onions until they become translucent. Add the meat pieces and stir-fry for 2 minutes. Once the meat is done and becomes opaque, add flour to it. Keep stirring until the pieces are evenly coated.

Step 3 Add water, veggies & spices.

Next, add water to it and allow it to boil for a minute. Bring down the heat and simmer it until the pieces are half done. Now add carrots, potatoes, beans, nutmeg, turmeric powder and stir. Season it with salt to taste and red chilli powder.

Step 4 Simmer for 5 minutes before serving.

Ingredients of Mutton Curry

  • 1 kilogram’s mutton
  • 1 teaspoon garlic
  • 1 teaspoon cumin powder
  • salt as required.
  • 1 teaspoon garam masala powder
  • 1/4 cup ghee
  • 2 bay leaf
  • 2 black cardamoms
  • 2 teaspoon turmeric
  • 1 cup chopped onions.
  • 2 teaspoon ginger

3 teaspoon coriander powder

  • 1 teaspoon black pepper
  • 1/4 cup mustard oil
  • 1 inch’s cinnamon
  • 4 cloves
  • 2 green cardamoms

For Marination

  • 1 teaspoon ginger paste
  • 4 teaspoon yoghurt (curd)
  • 2 teaspoon mustard oil
  • 1 teaspoon garlic paste.
  • 1 teaspoon salt
  • 1/2 teaspoon turmeric

Step 1 Wash the mutton and marinate.

Wash the mutton pieces (chopped into cubes) in running water. Keep aside to drain. When the water has almost dried, add the marinade ingredients. Mix well using your hands, rubbing the spices into the meat. Marinate for 1-2 hours.

 Step 2 Cook the masala.

Now take a heavy-bottomed pan and heat. One with a tight lid is preferred. Add oil and ghee. When smoke starts coming out of it, add the whole spices. Add a pinch of sugar. It gives an amazing colour to the mutton.

 Step 3 Sauté the onions

Add the chopped onions and cook on low flame for 10 minutes. At this point, you can add the salt. This increases the cooking process of onion. When the onions turn translucent, reduce the heat and wait for them to turn pink. Add turmeric and mix well. You can add turmeric at a later stage also but adding it in the beginning of the recipe helps you get rid of that raw smell of the spice.

 Step 4 Add the marinated meat and cook.

Now add the marinated mutton, ginger garlic paste and cook on high flame for 5-7 minutes, stirring continuously. It is advisable to use homemade ginger-garlic paste as the store bought one has high.

Cover the lid of the vessel, lower the flame and allow it to simmer. When the mutton is almost done, add coriander, cumin, black pepper and mix well.

 Step 6 Garnish and serve hot!

Cook uncovered till oil starts separating from the meat. Add a cup of water, garam masala powder and cook uncovered till oil floats on top. Transfer the mutton curry into a bowl, adjust seasoning, garnish with ginger juliennes, coriander leaves and serve hot with steamed rice or chapatti.

Step 7 Note this

To make the mutton pieces soft and tender, you can wash and soak the pieces in some lukewarm water, rinse properly and then marinate it with the spices and keep it aside for two hours. This makes the mutton pieces juicy and succulent as the spices are fully absorbed.
